Practices for sustainable food economies

The way food system activities are structured and organised leads to their lack of sustainability and resilience. Sustainable food economies therefore need new practices in which actors reconfigure structures, business models and institutions. This lecture focuses on two trends in the agri-food sector: the inclusion of local food into retail and the combination of horizontal and vertical coordination in food supply chains.
