Caroline travaille sur le développement de produits alimentaires intéressants du point de vue nutritionnel. Ces aliments sont constitués de fruits et légumes cultivés à la Ferme de Lauzelle selon les critères de l'agriculture biologique.

I am Caroline Waingeh Nain, a PhD student at the Louvain Institute of Biomolecular Sciences (LIBST) with interest in healthy food product development. My research focuses on enhancing the stability of bioactive fatty acid-rich oils to enable their incorporation into frequently consumed foods.
Quel master as-tu réalisé ?
Master of Engineering in food processing from ENSAI, University of Ngaoundere, Cameroon and an Advanced Master in food science and technology from ULiège and UClouvain
Quel est l’intitulé et l’objectif de ton mémoire/doctorat ?
My PhD project aims at developing hyper-nutritious food products based on locally produced fruits and vegetables with the incorporation of bioactive fatty acids. However, oils rich in bioactive fatty acids of interest, such as linseed oil rich in alpha-linolenic acid, Pomegranate oil rich in punicic acid and DHA-rich oil, are highly susceptible to oxidation. Thus, a greater part of my research focuses on enhancing the stability of such oils and understanding the mechanism of action of different natural antioxidants when added to these oils.
Pourquoi avoir choisi de faire un mémoire/doctorat en relation avec les Fermes Universitaires et qu’est-ce que cette collaboration t’as apporté ?
Collaboration with the Lauzelle farm gives me access to organically produced vegetables, which are principal ingredients in my product development experiments.
